Ingredients

Method

  1. Warm the vegetable oil in a large pan over a medium heat.
  2. Add the shallots, garlic and tomatoes and cook gently until softened.
  3. Stir in the parsley.
  4. Tip the beans and the softened vegetables into a large pot.
  5. Add the chopped chorizo and mix through.
  6. Cover and simmer on a low heat for 20 minutes.
  7. Alternatively, transfer everything to an ovenproof dish and bake at 180ºC/350ºF for 30 minutes.
  8. Serve hot, or cool and keep for the next day when the flavours will have deepened.
