Ingredients
- 150ml Water
- 1 tsp Sugar
- 15g Yeast
- 225g Plain Flour
- 1 1/2 tsp Salt
- Drizzle Olive Oil
- 80g Passata
- 70g Mozzarella
- Peeled and Sliced Oregano
- Leaves Basil
- Pinch Black Pepper

Method
- Preheat the oven to 230°C.
- Stir the sugar into the warm water, crumble in the fresh yeast and mix briefly.
- Leave the mixture somewhere warm for 10 – 15 minutes until a froth forms on top.
- Combine the flour and salt in a large bowl, hollow out a well in the centre, then pour in the yeast liquid and the olive oil.
- With floured hands, work the mixture together gradually until it forms a dough.
- Turn the dough out onto a well-floured surface.
- Knead for 10 minutes until the dough turns smooth, silky and soft.
- Set the dough on a lightly oiled non-stick baking tray, shaped as you like.
- Spread the passata over the base right to the edges.
- Scatter the mozzarella evenly across the top, sprinkle with oregano and black pepper, then add a light drizzle of olive oil.
- Bake for 10 – 12 minutes until the cheese just starts to colour.
- Scatter the basil leaves over the pizza before serving.
