Method

  1. Preheat the oven to 450 degrees. Cut the potatoes into wedges, spread on a baking tray with a little oil, salt and pepper, and roast until browned and tender, 20-25 minutes.
  2. Peel and thinly slice the red onion. Squeeze the lime juice into a small bowl, stir in the sliced onion, a pinch of sugar and a pinch of salt, and leave to quick-pickle while you cook the pork.
  3. Peel and finely chop the garlic. Warm some vegetable oil in a wide pan set over a medium-high flame.
  4. Tip in the garlic and cook briefly until fragrant, then add the pork with a good pinch of salt and pepper. Break it up as it cooks until browned through, 4-6 minutes.
  5. Stir in barbeque sauce, ketchup, a little sugar, some of the liquid from the pickled onions and a splash of water. Simmer, stirring, until the sauce thickens, 2-3 minutes, then check the seasoning.
  6. Split and toast the bread until golden, 3-5 minutes.
  7. Pile the barbeque pork onto the toasted bread, scatter over the pickled red onion, and add hot sauce to taste.
  8. Serve with the roasted potato wedges alongside.
