Skillet Apple Pork Chops with Roasted Sweet Potatoes & Zucchini

Ingredients

- 1 Apples
- 2 cloves Garlic
- 1 Lemon
- 2 Pork
- 1 Zucchini
- 1 Chicken Stock
- 1 tbsp Vegetable Oil
- 1 1/2 tsp Sugar
- 2 tbsp Butter

Method
- Heat the oven to 450 degrees, with racks set at the top and middle.
- Cut the sweet potatoes into half-inch chunks, spread on a baking tray with a little oil, salt and pepper, and roast on the top rack for 12 minutes.
- While that cooks, halve and core the apple and slice into thin half-moons, finely chop the garlic, quarter the lemon, and cut the courgette into half-inch half-moons.
- Toss the courgette on a second tray with oil, salt and pepper, and set aside.
- Pat the pork dry and season well with salt and pepper.
- Warm some oil in a wide pan set over medium-high heat, then fry the pork for 4-5 minutes on each side until browned and cooked through, and lift onto a plate.
- Once the sweet potatoes have had their 12 minutes, move the courgette tray to the middle rack too and roast both together for a further 12-15 minutes, until browned and tender.
- In the same pork pan, melt 1 tbsp of the butter over medium-high heat, add the apple with a little salt and pepper, and cook for 2-3 minutes, scraping up the browned bits from the base of the pan, until softened.
- Stir in the garlic for 30 seconds, then add the water, chicken stock, and sugar, and simmer for 3-5 minutes until thickened and the apple is very soft.
- Take the pan off the heat, stir in the remaining butter and a squeeze of lemon juice, and season to taste.
- Divide the pork, roasted vegetables and sweet potatoes between plates, spoon the apple sauce over the pork, and finish the courgette with a squeeze of lemon juice.
