Method

  1. Heat the oven to 425 degrees.
  2. Cut the potatoes into wedges about half an inch thick, spread over a baking sheet, drizzle with oil and season with salt and pepper. Roast on the top shelf for 5 minutes.
  3. While the potatoes start cooking, break the broccoli into bite-sized florets and peel and finely chop the garlic. Warm olive oil with half the garlic in a small bowl, either on the hob or in short bursts in the microwave, until the garlic just begins to sizzle, about 30 seconds.
  4. Take the sheet out, push the potatoes to one side and tip the broccoli onto the empty space. Toss the broccoli in the garlic oil, season, and return the sheet to the oven. Roast for a further 15-20 minutes, until both vegetables are browned and crisp at the edges.
  5. Meanwhile, pat the chicken breasts dry and season well. Fry in a hot pan with a little oil for 5-6 minutes on each side, until cooked through and golden; lower the heat if they colour too fast. Lift out the chicken to rest and wipe the pan clean.
  6. Return the pan to a medium-high heat with a splash more oil and the rest of the garlic. Cook briefly, about 30 seconds, until fragrant.
  7. Pour in the balsamic vinegar, honey and chicken stock with a little water. Let it bubble and reduce to a thick, glossy glaze, roughly 2-3 minutes, then take off the heat and stir in the butter. Season to taste.
  8. Slice the rested chicken and turn it through the glaze to coat. Serve alongside the crispy potatoes and broccoli, spooning any extra glaze over the top.
