Method

  1. Put the beef in a bowl with a pinch of salt, a pinch of pepper, 1 teaspoon of the sesame seed oil, the egg, the starch and 1 tablespoon of the oil. Mix well and set aside to marinate.
  2. Drop the noodles into a large pan of boiling water and cook for 10 seconds, just until submerged and loosened. Drain and rinse under cold water to stop them cooking further.
  3. Heat 2 tablespoons of oil in a wok over high heat. Fry the marinated beef until it is just cooked through, then lift it out onto a plate.
  4. Add another 2 tablespoons of oil to the wok, then add the onion, garlic and ginger. Stir briefly over high heat.
  5. Add the bean sprouts and mushrooms, then pour in the water so the vegetables are just covered. Let them cook until softened.
  6. Tip the drained noodles into the wok and toss to combine with the vegetables.
  7. Stir in the oyster sauce, remaining pinch of pepper, remaining teaspoon of sesame seed oil, sugar and soy sauce.
  8. Return the cooked beef to the wok and stir-fry everything together until heated through and well coated in the sauce.
