Quantities are the original recipe’s. The cost is our own estimate — typical own-brand supermarket prices for these quantities, divided by 4 servings. TheMealDB does not state how many a dish serves, so 4 is our assumption, not theirs. Treat it as “about this much a head”, not a shopping bill.
Method
- Cut the chicken breast into bite-sized chunks.
- Whisk the flour, egg, starch, baking powder, salt, onion salt, garlic powder and water together into a smooth batter, then coat the chicken pieces in it.
- Heat oil for deep-frying to 350 degrees.
- Fry the battered chicken in batches for 3-4 minutes, turning so the pieces don't stick together, until golden brown, then lift out and set aside.
- In a separate pan, combine the chicken stock, duck sauce, soy sauce, honey, rice vinegar, sesame oil, gochujang, garlic and ginger, and bring to a simmer.
- Mix the remaining starch with a little cold water and stir into the simmering sauce until it thickens to your liking.
- Add the fried chicken to the sauce and stir-fry for a minute so it's well coated.
- Scatter over the chopped spring onions and serve straight away.
