Method

  1. Set the oven to 190C/170C fan/gas 5.
  2. Combine the flour and caster sugar in a large bowl, then work in the butter with your fingertips until the mix looks like coarse crumbs, taking care not to overwork it.
  3. Scatter this mixture over a baking sheet and bake for 15 mins, until it turns a light golden colour.
  4. Meanwhile, peel and core the apples and cut them into 2cm chunks.
  5. In a saucepan, melt the second batch of butter with the demerara sugar over medium heat and let it bubble for 3 mins until pale caramel forms.
  6. Add the diced apple and cook for a further 3 mins.
  7. Stir in the blackberries and cinnamon and cook for another 3 mins.
  8. Take the pan off the heat, cover, and let it sit for 2-3 mins so the fruit finishes softening in its own heat.
  9. Transfer the fruit into an ovenproof dish, scatter the baked crumble over the top, and return to the oven for 5-10 mins to heat through.
  10. Serve hot with ice cream.
