Method

  1. Whisk the fromage frais, lime zest and caster sugar together in a small bowl, then season with salt and pepper and set aside for the dressing.
  2. Cook the linguine following the packet instructions, adding the sugar snap peas for the final minute so they cook alongside the pasta.
  3. While the pasta cooks, warm the olive oil in a large frying pan or wok over a gentle heat and add the garlic and chilli, stirring for about 30 seconds so the garlic stays pale.

  7. Tear in the basil leaves, mix through, and season with salt and pepper to taste.
  8. Serve at once with a side of salad leaves dressed with the lime and fromage frais mixture, plus warm crusty bread.
