Method

  1. Cut the potatoes into thin chips.

  4. Fry the chips in the hot oil until lightly browned, about 5 minutes.
  5. Lift onto a plate lined with kitchen paper to drain.
  6. Pile the chips onto a serving plate and scatter the cheese curds over the top.
  7. Spoon the hot gravy over the chips and curds and serve at once.
